Consistency across a team

Foam quality is a training problem before it is an ingredient problem. A shared, written standard is what makes the tenth sour of the night resemble the first.

The situation

Several bartenders build the same sour across a shift and the cap varies visibly from one drink to the next.

The standard

  • One written build per drink, dose included, visible at the station.
  • One agreed shake — described in duration and intent, not left to feel.
  • Glass chilling treated as part of the build, not a courtesy.

Pre-shift checklist

  • 01Dosing measure present at every station.
  • 02Ice well refreshed on a set interval.
  • 03Chilled glassware stocked before doors.

Training note

Run a two-drink comparison at pre-shift rather than describing the difference. A team that has seen the failure once rarely needs the explanation twice.
