The Prado is a remarkably spare tequila sour built from tequila, fresh lime and maraschino liqueur. Its simplicity puts the quality of the agave spirit at the centre, while the foam softens the drink's dry citrus structure without hiding it.

Ingredients

  • 60 mlReposado Tequila
  • 30 mlFresh Lime Juice
  • 15 mlMaraschino Liqueur
  • 20 mlFOAMY WHITES

Method

  1. 01Fill a shaker with large, solid ice cubes.
  2. 02Add all ingredients.
  3. 03Shake hard for approximately 10–12 seconds.
  4. 04Fine strain into a chilled coupe glass.
  5. 05Garnish with a lime wedge.

The Prado has uncertain origins but appears in Jones' Complete Barguide from 1977. Its combination of tequila, lime, maraschino and egg white places it somewhere between a tequila sour and a Daisy, with maraschino taking the sweetening role normally played by orange liqueur or syrup.

Bartender notes

  • The recipe contains very little sweetness, so both tequila and maraschino quality are especially noticeable.
  • Reposado tequila adds additional roundness while preserving the agave character required to carry the drink.
  • Fresh lime juice is essential; bottled citrus makes the already lean structure feel flat rather than precise.
  • Fine strain into a thoroughly chilled glass for the cleanest texture.
