Classic Fizz

Morning Glory Fizz

The Morning Glory Fizz is one of the most distinctive members of the nineteenth-century fizz family. Scotch whisky forms the base, brightened by citrus and sugar and sharpened by a small measure of absinthe before soda lifts the drink into a light, aromatic highball.

The Morning Glory Fizz appears in American bartender manuals from the 1880s, although the precise first publication and creator remain debated. Built around whisky, citrus, sugar, egg white and an anise-flavoured accent, it belongs to the period when fizzes were frequently consumed as morning drinks and restorative highballs.

Bartender notes

  • Absinthe is a seasoning in this drink rather than the base spirit. A small quantity is enough to change the entire aroma.
  • Choose a Scotch with enough character to remain identifiable after citrus and soda are added.
  • Keep the serving glass and soda water thoroughly chilled.
  • Add soda gently to preserve both carbonation and foam.

FOAMY WHITES Note

FOAMY WHITES adds the fine, persistent texture that distinguishes the Morning Glory Fizz while allowing the Scotch and absinthe aromas to remain clear.
